Happy Pi Day

Ok so 3.14 is just another day to most of us. But Caedee reminded us it was Pi so we are celebrating pi - with a recipe:

Creamy Chocolate Pie

Ingredients

6 tablespoons Cocoa Powder
4 tablespoons butter
2 cups milk
2 tablespoons corn starch
1 tablespoon flour
1 cup sugar
2 egg yolks
1 teaspoon vanilla

Preparation

1Dissolve cocoa into 2 tablespoons butter. Add milk over medium heat and stir until well-mixed.
2Mix corn starch, flour and sugar together and slowly add to milk mixture.
3Cook, stirring constantly until it begins to thicken.
4Beat egg yolks together. Remove 1/2 cup of milk mixture and slowly add to eggs and mix.
5Add to milk mixture while stirring constantly and cook until thick.
6Add the other 2 tablespoons butter and 1 teaspoon vanilla and stir.
7Pour into 9-inch baked pie shell.
8Top with whipping cream, cool whip, or meringue.

Time to Catch up with everyone

My what a whirl wind quarter this has been both professional and personal. Work is well work and with a recession going on I am grateful to have a job. I was promoted to EOII the first of February which is basically what I have been doing. Ok this is good. I like not being in the jacuzzi.

Onto Chris He had his second hip replacement done and is doing WONDERFUL. We are proceeding with leaps and bonds. I don't know what I would have done without Charlie and Jenn helping out with the girls and taking over Chris's SS class. This time was so much easier on both Chris and I - big difference. Thank you Father for answered prayers. Faye fed us one night and I kept bugging her until she finally gave me the recipe. I may have to post it here later.

Catherine has auditioned for SFA. Please keep her in prayer the next couple of weeks as she waits to hear if she made it into the music program.

Rae is doing wonderfully at her job at ETBU. She is very happy and now has a wonderful young man in her life that makes her laugh. I didn't even realize how much I missed hearing her laugh. AND she is starting to sing again! Thank you Father for healing.

Our exchange student Yuting won 1st place at an art competition with TCS and will be headed to state. She was very surprised and proud. She is looking into colleges here in the use after she returns to China and finishes her studies there. It is really cool to hear her sing praise songs.

All in all we are doing well. Thank you for your thoughts and Prayers. We could not have survived this last round of surgery without the prayer warriors wearing out their knees for my Chris.

Know that I think of you often even if I do fail to blog when I am suppose to.

Happy New Year everyone!

As this old year ends and the new one begins I ponder on how did all the scrapbooking stuff get in my bedroom? Why am I holding onto so much and what did I think I needed it for. I have two bags of adhesives ~ different types but TWO bags, Come on Stella. So my friend Cindy came up with a solution and I think I am going to add to it just a bit. I am going to keep a note book with me and ONLY buy stuff when I have a specific purpose in mind and I am going to WRITE down in my little scrap log WHAT I was going to do with it. I hope that my friends like Cindy, Nesa and Rae ask to see my scrap log and KEEP me honest this coming year.

Enough about me - What are your new year resolutions?

I was at a crop and two my friends decided to be silly. Bear just lifted Nesa and threw her over his shoulder and walked away. LOL

Mental Health Day

yesterday was one of those If I don't get out of this place I am going to kill someone or something days. So I emailed my Supervisor and told him I needed the day off. He said fine and I took today off.

I think if I do that rather than let it eat at me I will be able to come off the high blood pressure pills. I was ready to spit nails yesterday and it just kept getting worse until I was about to give my notice. Well as it have it, the thought of walking away for a long weekend seemed just the thing. I work 6 days out of the week and Sunday is so busy with church stuff I don't have time to relax. No wonder I never feel like I am getting any rest.

However today is a get ready for road trip day and it is going to be a fun day taking Cae to SFA. Rae is going to meet us in Longview and going to the college for a day of giggling girls and worring about how I am going to pay for it. Chris and I had breakfast this morning and picked up some OTC meds for his allergies. He is comfortably snoring away in the bedroom while I am fixing to run errands.

Please remember my little friend Maddie and her folks.
Please pray for a safe trip there and back for all of us this weekend.

Hi Its me again

Well it has been a wild time around here with marching season in full swing and all.

In August I received a phone call requesting an emergency placement of one of the exchange students. A little Japanese girl who was going to have to go home if they didn't find her somewhere - Okay move her in and that is when life gets interesting.

She apparently did not have the English skills she needed to be over here in the first place so we set up tutoring, etc and get her back on the path of learning. She seems to be adjusting and things are better.

I was sick for 4 weeks with something I thought was just allergies. Well after 3 seperate doctors and several prescriptions later. I am still coughing and not sleeping. Oh well

Rae visited from Florida for 2 weeks and applied for a couple of jobs

I spent a week in Austin for training and then took several days off the first of October to spend time with Rae

Catherine had been nominated for Homecoming queen for First Priorty. That meant more shopping 3 dresses, finding a car, plan a party etc.

Update on the weight lose - Catherine has lost 54 lbs and I only 8 but Dr is happy with my weight loss saying if I was an active teen running around like a chicken .... I most likely would lose it also. But since I am almost 50 and diabetic he is happy with me slowing losing weight. He said that loosing it slowing keeps it off. I think he was just trying to encourage me. However I am starting to walk the dogs again and that alone will be more activity than I have had in a while.

I need to upload some pictures but I haven't gotten to them yet.

Catherine is still talking about SFA this fall. I guess I will be making lots of trips to Nachoduches the next 4 years.

Oh big news. Rae is going to walk the boards in December. She wasn't going to because she was mad at the school but she has calmed down and is going to humor her mother.
